Why persistent cooking and spice odors can linger in a building

“Curry odor” is a common shorthand for an odor that remains after repeated cooking with combinations of oils, onions, garlic and aromatic spices. From a remediation standpoint, the important issue is not the name of the cuisine. It is the repeated generation, movement and deposition of cooking emissions inside a building.

A 2025 peer-reviewed study measured the real-time VOC emissions of several meals—including curry—and found that cooking emissions vary with ingredients, cooking method and ventilation. EPA separately identifies cooking as a source of indoor particulate matter. Together, those findings support a practical building-science conclusion: strong cooking odor can involve a complex mixture of airborne material plus residue on surfaces, not a single “curry chemical” that can simply be neutralized.

The remediation scope therefore depends on where residue has traveled, which materials are retaining it and how the property responds to cleaning.

What makes a long-term spice odor difficult to remove?

Repeated exposure

A one-time meal and years of repeated cooking are different conditions. Repeated emissions can build surface films and expose more of the building over time.

Oil and grease films

Cooking oil can create a sticky film that holds additional particles and odor-bearing material. Surfaces may look relatively clean while still carrying a thin residue.

Complex volatile compounds

Different ingredients and preparation methods generate different VOC profiles. No single deodorizer can be assumed to address every compound or every material reservoir.

Porous absorption

Carpet, pad, textiles, unfinished wood, some composite products and contents can retain odor differently from metal, glass or sealed tile.

Air distribution

Open floor plans, return-air pathways and pressure differences can move cooking emissions into adjoining rooms, closets and other low-ventilation spaces.

Previous cosmetic work

Fresh paint, fragrance or carpet cleaning can temporarily change the odor profile without removing grease films or hidden reservoirs.

Areas that deserve close inspection

Kitchen envelope

Ceiling and wall paint, cabinet exteriors and interiors, cabinet tops, range hood, grease filters, appliance surfaces, backsplash, trim and light fixtures.

Adjoining finishes

Doors, casing, nearby ceilings, open-plan living areas, window coverings, closets and surfaces immediately outside the kitchen.

Flooring & textiles

Carpet, pad, area rugs, drapes, upholstery and fabric shades can remain reservoirs after hard surfaces have been cleaned.

Cabinet substrates

Unfinished edges, particleboard, wood interiors and concealed top surfaces may hold odor differently than a sealed decorative cabinet face.

Mechanical pathways

Return grilles, filters and accessible components are inspected when HVAC operation appears to redistribute or intensify odor.

Contents left in place

Stored food, cardboard, fabric, paper products and other absorbent contents can confuse evaluation if they remain during remediation.

A practical remediation sequence for persistent spice odor

1. Establish a baseline.
Walk the property before cleaning, noting where the odor is strongest and whether cabinets, closets or HVAC operation change the intensity.
2. Remove obvious sources and disposable reservoirs.
Remove abandoned food, grease-loaded filters, trash and other obvious odor-bearing contents so they do not distort the next assessment.
3. Clean the kitchen from high-exposure surfaces outward.
Degrease compatible hood, cabinet, appliance, backsplash, wall, ceiling, trim and fixture surfaces. The exact chemistry must match the finish.
4. Expand only where the odor map supports it.
Move into adjoining rooms, closets, doors, soft goods and flooring when the condition indicates migration rather than automatically treating the entire building.
5. Evaluate mechanical pathways.
Replace contaminated filters and inspect accessible return/equipment surfaces if air movement is implicated. Duct cleaning is a condition-based decision, not a default line item.
6. Let cleaned materials dry.
Wet-cleaning products and elevated moisture can temporarily change odor perception. Final decisions should not be made while surfaces are still damp.
7. Reassess under normal operation.
Close the property, return HVAC and temperature to typical conditions, then determine what odor remains and where it is now strongest.
8. Escalate selectively.
Only after cleaning response is known should the project consider specialty adsorption/air treatment, coating, selective demolition or replacement of heavily affected porous materials.

Cleaning, sealing or replacement: how the decision changes by material

Painted walls & ceilings

Clean first using methods compatible with the coating. If odor persists after preparation and drying, a suitable odor-blocking coating may be considered. Coating is not a substitute for removing greasy residue.

Cabinetry

Finished faces may clean well while unfinished interiors, tops or composite substrates retain odor. The scope should distinguish between these surfaces rather than treating the cabinet as one material.

Carpet & pad

Professional cleaning may be reasonable for lighter exposure, but heavily affected carpet or pad in a vacant turnover may be more predictable to replace depending on age, value and response.

Textiles & contents

Launderable items, upholstered furniture and stored contents require their own cleaning/replacement decisions. Leaving heavily odor-bearing contents in place can cause an apparent “failure” of building cleaning.

How SDM approaches persistent odor

Source reduction comes before deodorizing equipment.

Odor complaints often involve both airborne contaminants and residue that has settled onto or been absorbed by surfaces and porous materials. EPA guidance identifies source control as the first strategy for improving indoor air quality, with ventilation and filtration serving as additional tools. SDM applies that hierarchy to odor remediation: find the likely source, reduce or remove it, clean affected materials, then decide whether supplemental treatment is still justified.

That distinction matters because a room can smell better temporarily while the material reservoir remains. A successful scope should be driven by inspection, cleaning response and reassessment—not by assuming every odor needs fogging, duct cleaning, ozone, demolition or a sealing coat.
